Healthy chicken schnitzel
This chicken schnitzel recipe is a healthy way to have your favourite chicken dish without the unwanted kilojoules. It’s an easy recipe and will fast become a favourite on your weekly menu.

- 3 chicken breasts

6 egg whites, lightly beaten

3 cups dry breadcrumbs

olive oil spray
method
- Preheat oven to 220 C. Line a baking tray with baking paper.
- Slice chicken breast through the centre. Place each slice between 2 sheets of cling film and flatten with a meat mallet until they are of even thickness.
- Coat each fillet in egg white and then cover in bread crumb.
- Lay on the baking tray and liberally spray each side with the olive oil spray.
- Bake for 20 minutes, stopping to turn halfway through cooking.

- I love to serve this with a crisp garden salad.
