The club sandwich is a classic sandwich made with slices of hot chicken and bacon, layered with lettuce, tomato and Dijonaise. Serve it with a big bowl of fries and you have a winner!
- 6 slices white bread
1 tsp butter
salt and pepper
1 chicken breast
4 slices shortcut bacon
4 tbsp Dijonaise (mayonaise with dijon mustard)
2 tomatoes, thickly sliced
1 baby cos lettuce, washed and pulled apart
- Slice the chicken breast into 4 escallopes (lengthways) and heat a frying pan over medium heat.Melt the butter in the pan and cook the chicken on both sides until just cooked.Cook the bacon at the same time in the same frying pan. Lay out all your other ingredients while the chicken is in the pan. Toast your bread and generously spread each slice with Dijonaise.Place the chicken and then the lettuce on two slices. Place another slice on top of these and spread with Dijonaise. Lay the bacon and tomato slices on top and season with salt and pepper.Place a third slice on top and secure with frilly toothpics or skewers.Slice into halves or quarters.
- Dijonaise is a type of mayonaise that is made with Dijon mustard. You can buy it beside the regular mayonaise in the supermarket.
