Apricot and macadamia bliss balls

These are a really great snack for all ages but kids particularly! Keep a stash of them in the freezer for when you need to fill them up with something full of flavour, goodness and protein.

  • 300g dried apricots
  • 110g toasted unsalted macadamias

  • 1 tbsp coconut oil

  • pinch of cinnamon

  • pinch of salt

  • 1 tbsp golden syrup


  1. Gather all ingredients.
  2. Combine the apricots, nuts, oil, cinnamon, salt and syrup in a food processor or blender. Blitz until well combined.
  3. Roll one tablespoon of the mixture into a ball and set aside on a plate or tray lined with baking paper.
  4. Repeat with the rest of the mixture then place in the fridge or freezer to firm up.
  5. Enjoy!


  • These balls will keep in the fridge for one week and the freezer for up to three months.
  • You could toss these balls in some toasted desiccated coconut too.
  • Swap half of the nuts with almonds or hazelnuts for a slightly more complex flavour.
  • Use honey or maple syrup instead of the golden syrup.
